Suanrou (SR), traditional fermented meat, is widely favored by consumers due to its unique flavor and characteristics. The present study sought to analyze the differences microorganisms in 18 SR samples from different regions of China through high-throughput sequencing (HTS) technologies. A total of 13 core microorganisms were identified at the genus level.
