The study analyses the species composition of local seafood. The test was performed on a traditional dish of the city of Sete, "Tielle setoise", a pie filled with cooked octopus, tomato sauce, and spices. We used CO1-gene-based metabarcoding for multiple species identification and looked for an association between species used to cook a tielle and its flavor.
