This dataset contains optical microscopy images of emulsions formed at various pH values as well as dynamic light scattering data quantifying the hydrodynamic diameters of the various nanoparticles synthesized/used. Thermogravimetric data for the emulsifier/ligand i.e. sodium stearoyl lactylate is also provided. This study successfully demonstrated the ability to synthesize iron oxide nanoparticles coated with a surfactant (i.e. sodium stearoyl lactylate) in order to generate stable Pickering emulsions. These emulsions were pH-responsive and resistant to significant destabilization in a saline environment, thereby lending themselves to applications in advanced oil spill recovery and remediation.
