Transcriptome profiling of primary fermentation of Pinot noir wines from California and Oregon

We performed time series RNA sequencing (3' Tag Seq) of primary fermentation of wines in the 2017 (16hr, 40hr, 64hr, 80hr, 112hr) and 2019 (2hr, 6hr, 16hr, 64hr, 112hr) vintages using Pinot noir grapes from 15 vineyards in California and Oregon. Fruit was harvested from each vineyard site at approximately 24 Brix and transported to the University of California, Davis Teaching and Research winery where it was fermented into wine using pilot-scale fermentations. Our goal was to use gene expression as a biosensor for similarities and differences among fermentations. We captured Saccharomyces cerevisiae gene expression, as well as gene expression by non-Saccharomyces yeast and Vitis vinifera.
