The objective of this step is to characterize the project samples and understand their physical and chemical composition. The results are described in terms of: free fatty acid content and acidity value; glyceride compound content and classes; unsaponifiable matter content; fatty acid composition; free and esterified sterol content; and tocopherol content and classes.
