This study aims to elucidate the antifungal and antimycotoxin modes of action of key stilbenoid compounds derived from vine by-product extracts. Specifically, we investigated the effects of two molecules—resveratrol (RES, a monomer at 35 µM) and vitisin B (VIT, a tetramer at 8 µM)—on Fusarium graminearum, the primary causal agent of Fusarium head blight in wheat and the main producer of type B trichothecene (TCTB) mycotoxins. F. graminearum was cultured in vitro and treated with either RES or VIT. Mycelia were harvested at 3 and 5 days post-inoculation for RNA extraction, followed by RNA-seq analysis. The transcriptomic effects induced by the treatments were assessed in comparison to an untreated control.
