By analyzing the genotype and phenotypic characteristics of the dominant lactic acid bacteria in traditional sourdough, the dominant lactic acid bacteria in sourdough were further studied, which provided a theoretical basis for further screening of starters with excellent characteristics and the application of traditional fermented staple foods.
