Brassica juncea var. tumida Tsen (Brassicaceae) was usually used to make “Fuling mustard” pickles, which is a famous salted food. In our study, Brassicaceae was employed for Sichuan paocai, which is a type of lactic acid fermented and mildly salted vegetable in China.
