The fatty acid composition of 27 cold-pressed cactus seed oils (CO) from various Moroccan locations and extraction periods was analyzed using gas chromatography with flame ionization detection (GC-FID). The objective was to provide a comprehensive overview of the fatty acid profile of Moroccan CO. The oil was predominantly characterized by unsaturated fatty acids, with linoleic acid (54.6–65.4%) being the most abundant, followed by oleic acid (13.0–23.0%) and palmitic acid (11.4–12.9%), which together accounted for approximately 90% of the total fatty acid composition. Additional fatty acids were also identified and reported. The data presented offer valuable insights into the fatty acid composition of Moroccan CO and serve as a foundation for further exploration and interpretation.
