Study on the Effect Short-chain Fatty Acid Production in Fermented Grains Stratified Fermentation of Strong-flavor Baijiu(Bacteria)

Solid-state fermentation of strong-aroma Baijiu (SAB) is an uneven fermentation process. The influence of fermented grains stratified fermentation remains unclear. We designed an experiment in a typical distillery to compare difference of bacteria community structure in fermented grains at different levels.
