Pickles are typical traditional Chinese fermented vegetables. Complex microbiota interacts throughout the fermentation and deterioration process. However, minimal studies are available regarding microbiota quorum sensing (QS). This study tracked the changes in general pickle properties at different stages, analyzed the corresponding microbial diversity, detected the QS signal-producing ability of strains isolated at key time points, and further identified the types of QS signal molecules.
