In this study, the impact of wheat bran on vitamin A bioaccessibility was investigated for systems containing bulk oil and systems containing emulsified oil. To this end, toasted and native wheat bran were mixed with vitamin A-enriched bulk and emulsified oil. Both samples with and without bran were subjected to in vitro digestion. Before and after in vitro digestion, the vitamin A content was determined. Based on these data, the vitamin A stability, vitamin A micelle incorporation efficiency and the vitamin A bioaccessibility were determined. In addition, lipid analysis was performed after digestion to determine the degree of lipid hydrolysis.
