This research explores legume consumption patterns in Germany based on a representative survey (n = 2,000). The study investigates consumer preferences across different types of legumes (e.g., beans, lentils, peas) and their varying degrees of processing (e.g., dried, canned, as meat alternatives) using a detailed food frequency questionnaire for legumes. By organizing the data into a comprehensive map, the research aims to identify distinct consumer profiles for each product category, shedding light on the factors influencing legume choice. The findings offer valuable insights, contributing to a deeper understanding of consumer behavior in relation to sustainable food choices and the role of legumes in German diets. The food frequency questionnaire differentiates between 58 categories of legume products. Consumer profiles are based on factors such as age, gender, education, city size, food neophobia, cooking skills, food-related lifestyle, health awareness, product class involvement, and knowledge of legumes. Hypothesis: Legume consumption (amount and type) depends on consumer profiles.
