This study investigates the bacteriocinogenic and probiotic potential of autochthonous strains isolated from raw milk and artisanal cheese in Brazil. Genetically distinct strains, characterized by REP-PCR, were identified using MALDI-TOF. Confirmed lactic acid bacteria were then evaluated for their ability to inhibit pathogens and promote health.
