Here, we apply a metabarcoding approach to scrutinize the diversity of bacteria and fungi of an organic Pinot noir wine that utilizes an autochthonous fermentation style. We monitored the microbial dynamics and how this changes across four important fermentation time points. This was assessed across two vintages (2018 and 2021) and two environmental systems (in fermentation cellar and in the vineyard) co-located at the same winery.
