Rhizopus oligosporus is separated from Indonesia traditional food tempe which has a better duration of high temperature mostly than other types of strains in tempe. White mycelium and black spores are two characteristics of it. When fermenting with Rhizopus oligosporus, high protein content substrate can be degraded into small molecular substances like peptides and amino acids due to enzyme system.
