Jasmine Flowers (Jasminum sambac (L.) Ait.) Color Degradation Kinetics Modeling Dataset

This dataset contains time-series image data used in the study “Jasmine Flowers Color Degradation User-Coded Computer Vision Image Analysis Tool and Kinetics Modeling” submitted to AgriEngineering. From the images of jasmine flowers over 25 h of natural storage, the RGB values were derived utilizing ImageJ, and 12 color indices were evaluated for color degradation kinetics modeling. The dataset consists of time-series inputs used to characterize the selected kinetic modeling (Zeroth, First Order, Exponential, Page, and Peleg) of color degradation of jasmine petals and pedicels during natural dehydration under storage. Sheet 1 of the file contains the RGB values of 4 samples for 25 h data for petals of jasmine flower Sheet 2 of the file contains the RGB values of 4 samples for 25 h data for pedicles of jasmine flower Sheet 3 of the file contains the consolidated data of RGB values and color indices used with color kinetic analysis.
