The aim of this study is to evaluate the food safety of plant-based meat analogues in the aspect of microbial quality by high-throughput sequencing analysis in five kinds of plant-based meat analogues. This study provides basis for detecting spoilage and pathogenic bacteria and controlling the rotten of plant-based meat analogues.
