UniTools World Recipes: 501 dishes from 127 countries in Russian and English

A machine-readable dataset of 501 home-cooking recipes from 127 countries, written natively in both Russian and English rather than machine-translated from one into the other. Each recipe carries: per-serving nutrition (calories, protein, fat, carbohydrates); minutes on every individual step; ingredients with stable identifiers, quantities and units; and an explicit scaling rule per ingredient, because a kitchen does not scale linearly — meat grows with servings, salt and spices are damped. Roughly 1,500 unique ingredients and over 3,000 steps in total. Photographs come from Wikimedia Commons and each carries its own author and licence in the record. Two files are provided. The JSON holds the complete structure including per-step and per-ingredient detail. The CSV flattens one dish per row for spreadsheet and quick statistical use. Honest caveat: the nutrition figures are computed from ingredient composition, not measured in a laboratory. They are a planning reference, not medical data. Version 2.0.0 removes the per-recipe url field and the url column of the CSV: the individual recipe pages on theunitools.com were retired on 2026-08-30 and those addresses answer 410 Gone. The JSON names one live address instead, landingPage: https://theunitools.com/en/data. Belgium’s English country name is corrected. Every other value is unchanged from 1.1.0: 501 recipes, 127 countries. The dataset page, the data file addresses and the photo addresses inside the records are kept working. The dataset is maintained by one person and versioned; this is version 2.0.0. Corrections are welcome and land in the next version.
