Chinese traditional Xiaoqu has been important fermentation starters with fungi originating from environments. A good Xiaoqu normally contained beneficial fungi preserved in mature Xiaoqu used and confirmed in the last year in the fermentation process of Chinese liquor and rice wine. To increase the standardation and safety of Chinese liquor and rice wine made from traditonaL Xiaoqu, studies has been recently focused on the exploration of beneficial fungi in traditional Xiaoqu.
