During fermentation, microorganisms like Lactic Acid Bacteria (LAB), yeast, and fungi use proteolytic systems to break down proteins into bioactive peptides that offer numerous health benefits. The database integrates data from: Manual Curation: Over 2300 research articles were screened, resulting in 134 relevant papers. Comprehensive Metrics: Information includes peptide sequences, mass, IC50 values, starter cultures, and fermentation conditions.
