This dataset supports the research article titled "Controlled atmosphere as a postharvest strategy for uvaia: visual quality maintenance, decay reduction, and functional compound stability." It contains the complete data used in the development of the aforementioned manuscript, including results from quality analyses (color, incidence and severity of decay, soluble solids content, titratable acidity, and vitamin C), physiological assessments (ethanol and acetaldehyde production, and SDH enzyme activity), bioactive compound quantification (carotenoids and phenolic compounds), antioxidant capacity assays (ABTS, ORAC, and HOCl), and volatile apocarotenoid profiling.
The dataset is composed of seven files: 3 Excel files (CA raw data.xls – raw data from all analyses; CA statistical data.xlsx – datasets used for statistical analyses; CA tables and graphs.xlsx – summary tables and graphical visualizations based on statistical outputs) and 4 RTF files (CA statistical results part 1.rtf, part 2.rtf, AlfaCarot.rtf, and Zeax.rtf) containing the results of ANOVA and Tukey’s test (p ≤ 0.05).
These results support the hypothesis that reducing O₂ concentrations to safe levels, in combination with appropriate CO₂ levels, may help extend the postharvest shelf life of uvaia fruit by preserving visual quality and maintaining the stability of functional compounds. Extending its postharvest life not only enhances its market potential but also contributes to biodiversity preservation and diversification of the human diet.
