Oil-in-water emulsions were formed and stabilized at low amphiphile concentrations by combining hydrophilic nanoparticles (NPs) (i.e., bare colloidal silica) with a weakly interacting zwitterionic surfactant, caprylamidopropyl betaine (CAPB), to generate a high hydrophilic-lipophilic balance. This dataset reports results from static light scattering (SLS) used to determine droplet size distribution for dodecane-in-deionized water and dodecane-in-synthetic sea water emulsions. SLS data are presented immediately after emulsions were prepared and after 1 and 24 hours after prepration for both treatments. Viscosity of dodecane-in-deionized water and dodecane-in-synthetic sea water emulsions are included. Viscosity of the aqueous phase in the absence of oil was measured using a AR-G2 rhometer for a shear rate from 0.01 to 1000 s^-1. Data used to calculate the emulsion formulation using the DLVO theory are provided. These data were used in the publication Worthen, A. J., et al.
