This study aimed to evaluate the effect of mangaba pulp fermented with the probiotic Lacticaseibacillus casei 01 (LC1) on the modulation of the intestinal microbiota of healthy vegan adults through 16S rRNA sequencing and functional, technological and sensorial aspects during refrigerated storage. Mangaba pulp was a suitable substrate for the growth of the probiotic culture, showing high viability in the product and after simulated gastrointestinal conditions.
