Food waste is a global environmental problem, and its recycling is essential. Vegetable and fruit biomass is a renewable energy source with great potential as a fuel source for the production of electricity and steam, consumer fuels, and laboratory solvents. Bioethanol from biomass has accounted for 10-14% of the world's energy supply and has solved the global crisis of global warming and depletion of fossil fuels. Currently, bioethanol is a global issue in efforts to reduce global pollution, which is largely contributed by the combustion of oil or diesel fuel, or a combination of both. Vegetable and fruit waste contains high sugars, which can be used as a feedstock for renewable energy production using Saccharomyces cerevisiae. Although 80% of current bioethanol is produced from consumable materials such as starch and sugar. Lignocellulosic biomass has recently attracted more attention. In this article, we reviewed the processes involved in the production of bioethanol from fruit and vegetable waste biomass through a fermentation process using Saccharomyces cerevisiae. A recent experiment revealed that fruit and vegetable biomass is a promising feedstock for bioethanol production.
