We speculated that lactic acid bacteria-exopolysaccharides (EPS) affect SCFA levels through modulation of gut microbes, resulting in beneficial effects on the host health. To test this hypothesis, EPS is isolated from viili. This viili EPS fraction (VEPS) is administered to mice fed a normal diet via tap water containing VEPS.
