Data generated in research on methods and compositions of High Internal Phase Pickering Emulsions (HIPPEs) stabilized by hydrocolloids treated by high pressure homogenization (HPH) and subsequent use as fat mimetics in biscuit fillings

The dataset includes methodologies, compositions, and results on the formulation of HIPPEs stabilized by hydrocolloids treated by high-pressure homogenization (HPH). The HIPPEs will be applied to cookie fillings. The project is still in the early stages of development, and the data will be protected by a patent.
