To compare the differences in volatile components among different tissues of goji berry, gas chromatography–ion mobility spectrometry (GC-IMS) was employed to detect the volatile compounds in leaves, flowers, mature fruits, and immature fruits. A total of 41 volatile organic compounds were identified. This study established fingerprint profiles of volatile substances in different parts of goji berry, providing data support and a theoretical basis for the comprehensive utilization of the whole plant, quality evaluation, and the development of characteristic flavor products.
