在预制水产干制品中“过氧化值(以脂肪计)”是一个非常重要的食品安全指标,直接关系到食品的品质和食用者的健康,过氧化值(Peroxide Value, POV)是表示油脂和脂肪酸等被氧化程度的一种指标,过氧化值越高,说明样品中脂肪被氧化的程度越严重,短期大量食用“过氧化值(以脂肪计)”超标的食品可能导致腹泻、腹痛、呕吐等症状,长期摄入亦与动脉粥样硬化、心血管疾病、肝损伤、肾脏损伤甚至癌症等慢性病的发生发展有关,不同种类预制水产干制品油脂和脂肪酸等被氧化程度速率不同,因此通过对在售预制水产干制品中过氧化值(以脂肪计)的检测分析,能够进一步了解各品类预制水产干制品过氧化值(以脂肪计)的风险情况。通过合格率了解易超标的风险品种,通过不合格占比了解年度重点监管品类,从而加强对预制水产干制品中过氧化值(以脂肪计)情况的关注,为各类市场主体在预制水产干制品的生产销售过程中具有指导意义,也为监管单位进行专项监管提供数据支持。1、数据采集:根据要求采集预制水产干制品样品并进行样品制备,依据检测方法进行定量分析,获得检测结果值。将采集样品编号、受理时间、样品名称、品类等数据录入本单位系统中。2、数据处理:筛选出鱼鲞中过氧化值检测结果GB 10136-2015《食品安全国家标准 动物性水产制品》中规定的限值为:预制水产干制品≤0.6g/100g,当结果值≤标准值时,判定合格;否则判定不合格;该品类当年合格率=该品类当年检测合格批次数A/该品类当年检测批次N*100%,保留两位小数;总不合格数为当年预制水产干制品中“过氧化值”不合格数之和,该品类不合格占比=该品类不合格数M/总不合格数*100%,保留两位小数;当该品类当年合格率≥98%时,风险评价=LR,当98%>该品类当年合格率≥95%时,风险评价=MR,当该品类当年合格率<95%时,风险评价=HR。

Peroxide Value (calculated on fat basis, POV) is a critical food safety indicator for preprocessed dried aquatic products, which directly affects both food quality and consumer health. POV measures the oxidation degree of fats, fatty acids and other components in food samples. The higher the POV value, the more severe the oxidation of fats in the sample. Short-term consumption of large quantities of food with excessive POV (calculated on fat basis) may cause symptoms such as diarrhea, abdominal pain and vomiting. Long-term intake is also associated with the onset and progression of chronic diseases including atherosclerosis, cardiovascular diseases, liver and kidney damage, and even cancer. The oxidation rates of fats and fatty acids vary across different categories of preprocessed dried aquatic products. Therefore, detecting and analyzing POV (calculated on fat basis) in commercially available preprocessed dried aquatic products can help further understand the risk status of POV in each product category. Identifying high-risk categories prone to exceeding standard limits via qualification rates, and determining annual key supervision categories through the proportion of non-conforming products, can strengthen attention to the POV status of preprocessed dried aquatic products. This provides guidance for various market entities during the production and sales of these products, and offers data support for regulatory authorities to carry out special supervision. 1. Data Collection: Collect preprocessed dried aquatic product samples and prepare them in accordance with requirements, conduct quantitative analysis per standard detection methods to obtain test results. Enter data such as sample collection number, acceptance time, sample name and category into the internal system of the institution. 2. Data Processing: Screen the POV test results of salted dried fish. The limit stipulated in GB 10136-2015 National Food Safety Standard: Animal Aquatic Products for preprocessed dried aquatic products is ≤0.6g/100g. A sample is deemed qualified if its POV value is ≤ the standard limit; otherwise, it is deemed non-conforming. The annual qualification rate of a category = (Number of qualified batches A of this category in the current year / Total number of tested batches N of this category in the current year) × 100%, rounded to two decimal places. The total number of non-conforming products is the sum of all non-conforming POV test results of preprocessed dried aquatic products in the current year. The proportion of non-conforming products of a category = (Number of non-conforming products M of this category / Total number of non-conforming products) × 100%, rounded to two decimal places. Risk assessment is defined as follows: LR when the annual qualification rate of the category ≥98%; MR when 98% > annual qualification rate of the category ≥95%; HR when the annual qualification rate of the category <95%.
