Phage EV3 was isolated from sourdough fermentations and was demonstrated to be active on Lactobacillus sanfranciscensis. EV3 belongs to the Siphoviridae family (Caudovirales) (morphotype B1). Its life cycle at 25C° lasts 3 h with a burst size of about 30 viral particles per infected cell. The genome is a double-stranded linear DNA molecule with a pac-type system. Phage spreading into sourdough did not adversely affect acidification and volume increase of the dough neither lactobacilli counts. Phage EV3 encodes a dextransase located in the phage lysis module that is supposed to be a lysogenic conversion gene. Sequence analysis of the prophage sourounding regions revealed that the EV3 integration site is in the tRNALeu gene locus of the L. sanfrancicensis genome.
