The present invention provides a method for increasing the isoflavone content of soybean sprouts, and soybean sprout extracts obtained in this way, by treating the soybeans with germinated nutrient water containing any one or more selected from the group consisting of the following A to F. A: Potassium nitrate (KNO 3),Magnesium Sulphate Heptahydrate (MgSO4-7H20), and monoammonium phosphate ((NH4)H2PO4) Mixture B: manganese sulfate hydrate (MnSO4-H2O), boric acid (H3BO3), Zinc sulfate (ZnSO4), copper sulfate pentahydrate (CuSO4-5H2O), sodium molybdate hydrate (NaMoO4-2H2O), and cobalt chloride hexahydrate (CoCl2-6H2Mixture C of O): calcium chloride dihydrate (CaCl2-2H2O) D: Potassium iodide (KI) E: Iron sulfate heptahydrate (FeSO4-7H2O), and ethylenediaminetetraacetic acid disodium dihydrate (Na2EDTA-2H2Mixture F of O):Thiamine-HCl hydrochloride, nicotinic acid, pyridoxine hydrochloride (Pyridoxine-HCl)
