The images presented in this dataset are quantitative sodium MRI scans. They illustrate the methodological development described in the article published in Food Research International: "Spatiotemporal quantification of sodium concentration in food using magnetic resonance imaging." They demonstrate the effectiveness of RF B1⁺ field inhomogeneity correction on a homogeneous phantom. They also show the evolution of salt distribution in carrot over a 4.5-hour period following two salting methods: salting in water and surface salting with fleur de sel. Finally, the four spatiotemporal datasets shared here were used to build a diffusion model of sodium in this food product. The objectives of the scientific article were to present the development of a quantitative sodium MRI method that accounts for RF field inhomogeneities, in the specific context of an object in which sodium is diffusing. These data may be valuable to anyone interested in developing quantitative MRI methods. The data were acquired using the AgroResonance platform, as part of the Sal&Mieux project funded by the ANR (ANR-19-CE21-0009). The images are sodium nucleus MRI scans acquired at 9.4T, at room temperature. The sequence used is a Spiral, with a spatial resolution of 0.5×0.5×5 mm.
