Lactococcus lactis is a key lactic acid bacterium widely used in food fermentation, itsperformance can be compromised under acid stress encountered during industrialprocesses. We screened 60 L. lactis isolates from traditional fermented dairy productsand identified XGL9-3 as acid-tolerant and XZ5304 as acid-sensitive.
