Between 2007 and 2015, the quantity of goose foie gras produced annually in France followed the same pattern as the production volume of duck foie gras for the same period. It remained stable, around 450,000 heads per year, with slight increases and decreases. However, the production dropped in 2016 and reached its lowest in 2017 at 181,000 heads. In 2015, an avian flu epidemic (H5N1) hit France, while many ducks and goose were affected, this strand of the virus was particularly dangerous to chicken. However, between 2016 and 2017, the H5N8 virus, another variation of the bird flu, spread across the country. This strand of the virus was deadly to both ducks and goose, and, as a result, millions were euthanized.
