Escherichia coli O157: H7, one of the most common foodborne pathogens worldwide, can infect the human body through polluted food at low infective doses to cause hemorrhagic diarrhea, enteritis and even hemolytic uremic syndrome. This bacterium has strong tolerances to low temperatures and poor nutrition, so it can easily survive in refrigerated ready-to-eat (RTE) food. It is very important to develop natural antibacterialagents to control Escherichia coli O157: H7. The objective of this study was to investigate the transcriptome response of Escherichia coli O157: H7 to two natural antimicrobial agents (Kojic acid and Tea polyphenols), to provide a reference for the optimization and application of these two natural antimicrobial agents.
