About the Database
FermFooDb addresses the need for a consolidated platform focused specifically on peptides obtained from the fermentation of various food matrices. During fermentation, microorganisms like Lactic Acid Bacteria (LAB), yeast, and fungi use proteolytic systems to break down proteins into bioactive peptides that offer numerous health benefits.
