Samples from the processing environment and from meat samples were collected from 4 Irish facilities during two seasons. First sampling occurred during the summer season (October 2023), while the second sampling occurred during the winter season (March 2024). Whole Microbiome Sequencing was performed to describe the composition and metabolic potential of microbial communities inhabiting the food processing environment and the final meat samples.
