It fully records the core raw experimental data of isolation, purification, structural characterization, and in vitro anti-inflammatory activity evaluation of the homogeneous polysaccharide CCL-S8 from cucumber seeds. The dataset supports the key conclusions of this study, including verification of polysaccharide purity and homogeneity, structural feature analysis, cell viability assay, inhibition of inflammatory mediators, and regulation of inflammation-related gene expression. It also provides reusable experimental data for the study of structure–activity relationships of plant polysaccharides and screening of natural anti-inflammatory substances, and can be used for secondary analysis and methodological validation in statistical software such as GraphPad Prism and SPSS.
