Metabolomics and transcriptomics revealed the effects of different fermentation times on antioxidant activities of Ophiocordyceps sinensis

Chinese cordyceps is a traditional medicinal fungus, and Ophiocordyceps sinensis (O. sinensis) is a fungus isolated from wild Chinese cordyceps, both of which have similar chemical compositions and pharmacological effects. Currently, previous studies focused on the comparison of metabolites between Chinese cordyceps and O. sinensis, but ignored the evaluation of antioxidant capacity between them.
