Dynamics and phylogenetics of psychrotrophic bacterial populations in raw milk collected in the North East of Algeria. Psychrotrophs

The cold storage of raw milk after collection has showed a decrease of microbial growth, but it favors the selection of psychrotrophic bacterial populations in milk microflora. In addition to this alteration tendency, some psychrotrophic species are considered as opportunistic pathogens or pathogens carrying resistance to antibiotics and/or producing toxins. These characteristics give these microorganisms a fundamental importance in relation to food spoilage and safety, causing significant economic losses for the food industry and a major risk to human and animal health.
