This dataset contains the experimental raw displacement fields obtain with Digital Image Correlation from the cutting experiments of soft materials. Every specimen is tested with a blade that penetrates the material. The experiment begins with an indentation regime followed by a cutting regime. All specimens have a length in the cutting direction of 30 mm and height of 21 mm. Gelatin hydrogel samples and Elastomer samples have a width of 30 mm and meat-based food material samples have a weight of 25 mm. The files are named according to:- the type of sample (gelatin_hydrogel, elastomer, meat-based food material),- the velocity of the blade (0.021 mm/s),- the initial height of the sample (length in the blade penetration direction, l=21 mm),- the width of the samples (w),- and the number of the experiment up to the total number of repetitions under the same test conditions (R1, R2, etc). Inside each .zip file, .txt files contain the horizontal (u, third column) and vertical (v, fourth column) displacement fields for each loading stage along the deformation, for points in coordinates x (first column) and y (fourth column). Information on the acquisition rate and mm - pixel relation of images is provided inside each folder so that each displacement field can be related to a value of the displacement of the blade during loading. The DIC data are provided only for one representative experimental repetition for each material (the same one presented on the related research article).
