Bee bread is a pure natural fermented food mixed with bee secretion, pollen and honey. It is not only of high nutritional value, but also rich in a large number of bioactive substances. Compared with bee pollen, it is easy to be digested and absorbed by the human body. The paper identified and analysed of bacteria and fungi in the bee bread of two species of A. cerana and A. mellifera in the four seasons, and revealed the seasonal dynamic changes of microbial composition in the bee bread of two species of bee.
