基于规范的食品抽(取)样和实验室检测,依据标准方法处理原始检测数据,获得所检食品样本中铅含量数据,通过比对食品安全国家标准,对样品进行合格性评价,判定食品中铅含量是否达标。该数据可为食品生产主体掌握食品质量状况、强化原材料采购及质量把控、规范食品生产行为提供科学依据,并为监管部门开展食品安全监管提供执法证据。1.样品检测:依据相关工作规范组织抽(取)样及制样,精确称取均质食品试样(固体样品0.5000g,液体样品3.0000mL),按照《食品安全国家标准 食品中铅的测定》(GB 5009.12-2017 第二法 电感耦合等离子体质谱法)进行前处理及上机检测,读取样品浓度C(μg/L)数据。2.数据处理:根据计算式计算样品中甜蜜素含量检测结果X(g/kg)=(C×V×n)/(m×1000),其中,C(μg/L)为样品浓度,V(mL)为定容体积,n为稀释倍数,m(g)为取样量。3.合格率计算:依据《食品安全国家标准 食品中污染物限量》(GB 2762-2017)对样品进行合格性评价,并计算合格率(%) = (合格样品数量 / 检测样品数量) ×100%。4.数据应用:食品生产主体可根据食品中铅含量检测数据,对照食品安全国家标准,准确了解食品质量情况,进而规范原辅料索证索票及入库检验、强化生产工艺及产品储运管理等,食品监管部门根据检测数据及合格率统计数据精准开展食品安全监管和风险交流。

Based on standardized food sampling and laboratory testing, raw test data is processed following standard methods to obtain lead content data for the tested food samples. By comparing with national food safety standards, the qualification of each sample is evaluated to determine whether the lead content in the food meets the required standards. This dataset can provide scientific evidence for food producers to grasp food quality status, strengthen raw material procurement and quality control, and standardize food production practices, as well as offer law enforcement evidence for regulatory authorities to carry out food safety supervision work. 1. Sample Testing: Sampling and sample preparation are conducted in accordance with relevant operating specifications. Homogeneous food samples are accurately weighed (0.5000 g for solid samples, 3.0000 mL for liquid samples). Pre-treatment and instrumental testing are performed in accordance with *National Food Safety Standard: Determination of Lead in Foods* (GB 5009.12-2017, Second Method: Inductively Coupled Plasma Mass Spectrometry), and the sample concentration C (μg/L) data is recorded. 2. Data Processing: The test result X (g/kg) for cyclamate content in the sample is calculated using the formula: $X = frac{C imes V imes n}{m imes 1000}$, where C (μg/L) is the sample concentration, V (mL) is the constant volume after dilution, n is the dilution multiple, and m (g) is the sampling mass. 3.
