Data for: Solubility study and intensification of extraction of phenolic and anthocyanin compounds from Oryza sativa L. ‘Violet Nori’

Research data files provided involve the results of the spectrophotometric and HPLC analysis of all the 'Violet Nori' extracts obtained in each step of the present work.
