This dataset is part of a comprehensive study on microbial kinetics under High Pressure Processing (HPP) and Pulsed Electric Field (PEF) treatments. It includes data on parameters and microbial counts for PEF-treated cherry and raspberry juices, modeling and kinetics data for these juices, HPP modeling and kinetics data for strawberry and cherry nectars and other juices, and microbial reduction data for HPP-treated cherry and raspberry juices. Additionally, this dataset includes MATLAB scripts (Quadratic_Model_Surface_Analysis.m) designed to calculate quadratic models and surface responses, and (Weibull_Kinetics_Model.m) to calculate the Weibull distributions from the provided data. These scripts facilitate the analysis of interactions between treatment parameters and microbial responses, enabling researchers to visualize and predict the effects of HPP and PEF on microbial populations in fruit juices. The dataset aims to provide insights into the effects of these non-thermal preservation methods on microbial populations in fruit juices, contributing to the development of more effective food safety protocols.
