Dataset on velocity fields around single and interacting particles sinking in aqueous xanthan gum solutions

This dataset contains (1) 2D2C velocity fields around spheres sinking in dispersions of xanthan gum (XG) in distilled water (2) shear and extensional rheological characteristics of these non-Newtonian dispersions. Experiments comprised two test solutions containing 0.75 and 1.25 g/L of XG. The settling of three types of spheres was examined in a settling column using Particle Image Velocimetry (PIV).本数据集包含两类内容：（1）黄原胶（xanthan gum，XG）于蒸馏水配制的分散体系中，下沉球体周围的二维二分量速度场；（2）该类非牛顿分散体系的剪切流变特性与拉伸流变特性。实验采用两种测试溶液，其黄原胶浓度分别为0.75 g/L与1.25 g/L。研究借助粒子图像测速法（Particle Image Velocimetry，PIV）在沉降柱内对三类球体的沉降行为进行了观测。
