This dataset contains the experimental data underlying the study of the effects of edible insect aqueous ethanolic extracts and simulated gastrointestinal digesta on intestinal cell metabolic activity and lactobacilli adhesion. Data were obtained for house cricket (Acheta domesticus), yellow mealworm (Tenebrio molitor) and migratory locust (Locusta migratoria). MTT-derived metabolic activity was evaluated in Caco-2 and HT29 cells, and adhesion of Levilactobacillus brevis, Lactobacillus gasseri and Lacticaseibacillus rhamnosus was assessed using a mixed Caco-2/HT29 intestinal cell model. The deposited data comprise the normalized experimental values used for statistical analyses and preparation of the figures and tables reported in the associated manuscript. Experimental procedures and statistical analyses are described in the manuscript and accompanying README file.
