In this study, utilizing the dextran sodium sulfate (DSS)-induced colitis animal model, we explored to what extent the consumption of quinoa alleviates the dysbiosis of intestinal microbiota and reduces the symptoms of DSS-induced colitis, with an attempt to develop dietary strategies to prevent IBD.
