Baijiu put mud Metagenome

This dataset contains microbial community profiles of 27 Baijiu cellar mud samples, categorized by three cellar age groups 0 years, 20 years, and 50 years, and three spatial positions upper, middle, and bottom per cellar. Baijiu fermentation depends on cellar mud microbial consortia, which shape liquor quality. Samples were collected to explore how microbial diversity varies with cellar age and position. This dataset aids studies on fermentation microbial ecology, supporting optimization of Baijiu production and comparative analyses with other fermentation systems.
