Low temperature storage is an effective way to extend the shelf life of fruits after harvest. However, in cold intolerant fruits, such as banana, the low temperature can disrupt the cellular compartmentalization and lead to sever browning. The molecular mechanism under which the low temperature induce the banana peel browning remains to elusive. To understand rewiring in transcriptional regulatory networks of low temperature induced browning in banana peel, we employed chromatin accessibility, histone modifications, transcription factor binding, and gene expression assays to comprehensively dissect the transcriptomic and epigenomic state alterations of banana peel in response to low temperature.
